Asian Inspired Chicken & Shrimp Vegetables over Jasmine Rice

What he used:
  • Chicken Breast or Tenderloins
  • Shrimp - we used mini-ones, but you can use whatever size you please.
  • Frozen Stir-fry Mixed Veggies
  • Panda Express Mandarin Sauce
  • Jasmine Rice
  • Ginger
  • Salt
  • Seasoning Salt
  • Pepper
  • Garlic Powder
  • Olive Oil
  • Butter – unsalted

How he did it:
Begin by cooking your chicken, Hubs pan-seared it until done.  Next he pan-seared the shrimp, careful not to overcook, because it only takes a few minutes to cook shrimp.  He seasoned both chicken and shrimp with a little bit of salt and pepper, and they were pan-seared in Extra Virgin Olive Oil.
In a separate, saucepan he created the lovely teriyaki/mandarin sauce.  Hubs used the Panda Express Mandarin Sauce as his base, and added in his ginger, garlic powder, and seasoning salt.
Meanwhile, he had his jasmine rice going in another pot.  Lightly salting and buttering it with some unsalted butter. The veggies took a quick boil to cook to crispness before he added them to the sauce mixture.  Hubs lets the veggies and sauce simmer until the veggies were well covered and saturated in the sauce.

And bon appetite!  This recipe does take a little bit of time…and dishes, but its well worth it.  It also stretches, so if you need to make a meal for a large family or several people, this is definitely a good one.  And to add, it was super healthy with great sources of protein (just what I preggo like me needs) and veggies.
The amounts of what he used weren’t precise, so they were not included. I will say that it made roughly 3-5 servings, because we were able to have leftovers for the next two days.
